Along with carbonation with ozone, oxygen, nitrogen or their mixtures with simultaneous ultraviolet treatment, short-term treatment in vibrational mills, heat treatment with electric current, ultrasonic distillates are known to be treated in the presence of taste-stimulating accelerators.
A method is known for the rapid maturation of distillates (DD PS 614) and ultrasonic treatment (CH) PS, in which ultrasound, along with the acceleration of chemical reactions, also accelerates extraction processes in the presence of bunch-forming accelerators, mainly wood.
A disadvantage of the known methods of processing by ultrasound is that they do not achieve reproductive quality parameters, Tc (as the most important technical and technological conditions are not fulfilled.

The purpose of the invention is to develop an industrial method that accelerates the maturation of distillates and by which reproductive quality parameters are achieved. 3E The invention has the task to develop an industrial method with the necessary devices for use, the introduction of which significantly accelerates the maturation of distillates with at least the same quality remaining. This goal is achieved by the fact that distillates in the presence of bouquet-forming accelerators, mainly wood, are exposed to an ultrasonic field with a possible uniform distribution of intensity throughout the whole volume and the optimum operating frequency. In order to achieve an absolute equal to the magnitude of the ultrasonic action: on all elements of the distillate volume. It is pumped at the time of dubbing in the system being voiced. In this case, the distribution of the distillate flow and the location of wood accelerators are important. The method is applied in a closed system, isolated against the heat transfer, i.e. approximately adiabatically.
